Fall Cooking: Roasted Butternut Squash Soup & Curry Condiments

Our owner Shannon Turner loves to cook! This recipe was so good, she had to share it. Pass it on!





Onion, apple, 1 inch cubes of butternut squash, ready for oven tossed in olive oil, Kosher salt, fresh ground pepper.
Chop chop and toss in garlic olive oil kosher salt, apples, squash, onions ,and bake in oven.  Ooooh the delicious aroma!!!

After chopped &  baked, then Cuisinart, add some fresh squeezed lemon, swirl away, purée, and add yummy chicken stock!!!
All ready, all puréed, all gooood!

This wonderful huge blue pot Le Creuset I have had for many years, cooked many yummy dishes.... Go get one!

And it's good!
